Grain Recipe: Kasha Selyanskaya (Country Style) - authentic Russian recipe
Excellent representative of authentic
Russian food
Ingredients:
Buckwheat (8oz)
Water(16oz)
Beef Liver (1 lb)
Onions (1)
Butter (2tbsp)
Eggs (2)
Pig fat or Canadian bacon (the fatter the better) (0.75 lb)
Serves 4
Cooking Instructions
1. Place the cookware with buckwheat over medium heat
2. Stir for 5-10 minutes
3. Add boiling water and salt, cover tightly, reduce heat to
low, and simmer for about fifteen to twenty minutes or until buckwheat is ready (grains are tender). Drain the excess water (if not all absorbed)
4. Add butter
5. Fry and grind the liver
6. Chop and fry onions
7. Hard boil eggs and crumble with the knife
8. Mix buckwheat, eggs, onions and liver, stir well
9. Cut fat or bacon in thin (1 cm) slices an put half in baking dish to cover all of its bottom
10. Put kasha on top (do not mix) and place the rest of bacon on top to cover all kasha
11. Bake in the oven until there is a crust
(use appropriate oven-safe cookware)
