Borsch
In Russian
and Ukraine cuisines borsch (borshch,
borscht) is very popular. It
has a lot in common with another popular Russian
dish - shchi. The main ingredient of any
borsch is a beet. This is why any borsch has
very reach taste and bright red color. Real
borsch has a little bit sweetish taste. There
are many very popular recipes of borsch. As with
kasha you can experiment with ingredients and
create you own borsch recipe, including vegan or vegetarian
recipes. You can try such ingredients as beans, cabbage, carrots, cucumber, potatoes, onions, or
tomatoes, mushrooms, and meats (chicken, pork, or beef).
Borsch
Vegan Recipe "Homemade"
Ingredients:
Water (6-8 glasses)
Large beets (2)
Cabbage (0.5 lb)
Carrots (1)
Parsley
Onion (1)
Tomatoes (2)
Vegetable Oil (2tbsp)
Sugar (1tsp)
Vinegar (1tbsp)
Salt (pinch)
For
not vegan recipe you can add:
pig
fat (0.2 lb)2
meat broth (1 can)
Cooking Instructions (vegan recipe):
1. Clean and cut cabbage
2. Bring water to a boil, add cabbage and cook for
15 minutes
3. Meantime, clean beets, carrots and other
vegetables. Peel beets,
carrots and other vegetables, cut into average
size pieces
4. In another pot combine all vegetables,
sugar, vinegar, add oil and cook on low heat for
30 minutes
5. Add this vegetable mix into the cooking dish with
cabbage
6. Cook until ready
For
non vegan recipe - 10 minutes before borsch is
ready, cut pig fat in small cubes and add to the
borsch together with broth. When serving add 1
tbsp of sour cream or mayonnaise in each pale or
bowl.
Comments:
10 minutes before borsch is ready you can chop
and add garlic. Borsch is great when served with
rye bread.

Grains Fact: You can substitute whole wheat flour for white flour in all baked goods and make sure to look for products such as pastas or bread with whole wheat as the first ingredient.
