In Russian and Ukraine cuisines borsch (borshch, borscht)  is very popular. It has a lot in common with another popular Russian dish - shchi. The main ingredient of any borsch is a beet. This is why any borsch has very reach taste and bright red color. Real borsch has a little bit sweetish taste. There are many very popular recipes of borsch. As with kasha you can experiment with ingredients and create you own borsch recipe, including vegan or vegetarian recipes.  You can try such ingredients as beans, cabbage, carrots, cucumber, potatoes, onions, or tomatoes, mushrooms, and meats (chicken, pork, or beef).
