Peas Kasha with Onions and Canadian bacon
Ingredients:
Peas (16oz)
Onions (4)
Vegetable oil (4oz)
Salt (optional, according to your taste)
Canadian bacon (1 lb)
Serves 4
Cooking Instructions:
1. Wash peas
2. Soak in warm water for 8-10 hours
3. Combine peas with water so water just covers the
peas
4. Bring to a boil. Reduce heat, cover, and simmer until peas are ready, stirring
occasionally
5. Meantime, cut onions
6. Fry in oil until golden brown
7. When peas are ready (tender, not mushy), turn off the heat, drain excess water and mix in prepared onions.
Stir
8. Cut Canadian bacon in very small pieces (almost chunked)
9. Mix with peas. Cover and cook for another 15 minutes
over low heat
Comments:
Serve hot. Canadian bacon can be replaced with any kind of smoked meat or even hot dogs.
Whole
Grains Fact: You can
soak most whole grains overnight to cut down the cooking time—this works great with brown rice and oats, which end up a bit softer than without the soaking.
