Grain Recipe: Millet Kasha with Prunes and Walnuts
(great kids recipe, vegetarian or vegan
recipe)
Ingredients:
Millet (8oz)
Prunes (16oz)
Walnuts (8oz)
Water (20oz)
Butter or Vegetable Oil (2oz)
Sugar (2oz)
Serves 2-3
Cooking Instructions:
1. Rinse prunes with warm water
2. Remove seeds
3. Cut/chop prunes
4. Add water and cook prunes for 10 minutes, drain water
5. Rinse millet with boiling water
6. Combine millet with hot water (20oz)
7. Bring to a boil, add salt
8. Reduce heat, simmer and stir occasionally removing foam if required
9. Approximately 10 minutes before kasha is ready
add finely cut walnuts and prunes
10. After kasha is done, cover and let it stay 15 minutes before serving

vegan or vegetarian whole
