Kasha “Kupecheskaya” –
Russian traditional recipe, vegetarian or vegan Russian recipe
Ingredients:
Buckwheat (8oz)
Eggs (3)
Mushrooms (1 lb)
Onions (2)
Salt (1/2 teaspoon)
Water (16oz)
Serves 2-3
Cooking Instructions:
1. Place cookware with buckwheat over medium heat
2. Stir for 5-10 minutes
3. Add boiling water and salt, cover tightly, reduce heat to low, and simmer for about fifteen to twenty minutes or until buckwheat is ready (grains are tender). Drain the excess water (if not all absorbed)
4. While buckwheat is cooking, cut onions and
mushrooms
5. Hard boil eggs, use grater turn eggs to crumbs
6. Combine eggs, onions and mushrooms in frying pan, mix and fry for 5-10 minutes
7. Add this mix into the cooked buckwheat, add salt and mix
8. Cover and let to stay for 15 minutes before serving
Comments:
You can serve this kasha with mayonnaise (on a side or mixing)
