Guryevskaya Kasha
Great representative of authentic Russian
recipes, great when served as a dessert.
Serves 6
Ingredients
Cream (1qt)
Milk (20oz)
Semolina (4oz)
Nuts (1 ½ lb): walnuts, if possible with cedar
Bitter almonds (10)
Sugar (4oz)
Jam (4oz): strawberry or cherry
Butter (2tbs)
Lemon Pulp (1oz)
Licorice (2tsp)
Pinch of vanilla
Cooking Instructions
1. Prepare the nuts. Extract nuts kernels, and place them in hot water for 5
minutes
2. Drain the water and chop nuts
3. Spare 2tbs of sugar and place the rest of it in the pan. Add lemon and heat until sugar starts to melt. Add nuts and
stir
4. As soon as nuts are caramelized, take them out and let cool
down
5. Pour cream into a shallow pan. Place it into the hot oven
6. As soon as you see pinkish skin on the cream, take it carefully away on the plate (use spatula washed in oil). The thicker skin – the
better
7. Collect 7-8 skins, put them separately on oily surface
5. Bring milk to the boil
6. Gradually stir in the semolina, mixing well
7. Add the butter, sugar and salt, mix all well
8. Reduce the heat and cook over low heat for 10-15
minutes
9. The kasha should be thick and viscous
10. Add the rest of baked cream, nuts, butter, sugar (2tbs), spices, salt, and mix very
well
11. Place kasha into the oven to warm up for 30 minutes (use
oven-safe cookware)
12. Prepare a baking form. Grease it with butter.
13. Put a little kasha as first layer (½’’) and then carefully place one of the skins over
it
14. Repeat adding layers of kasha and skins until all skins are used. Every next layer of kasha should be thinner than the
first
15. After you placed the last skin spread ¼ glass of jam right over
it
16. The last layer should be made of kasha only
17. Place the form into the hot oven for 10-20
minutes
18. After the kasha is ready, take the form out the oven, and spread the rest of the jam on top. You
can also place some pieces of fruits, usually apricot,
on top
Comments:
Guryevskaya Kasha is best when served with
apricot puree or any fruit juice. You can also
try to serve the kasha chilled. Cut in pieces
like a cake and serve.
